Hi there, Diana! If you'd only like one loaf, we'd recommend making a half batch of the recipe. We don't suggest freezing raw dough as it can damage the yeast cells, making for a poor rise after defrosting and because this recipe already includes a long rise in the fridge, the dough will likely over-proof if left in there any longer.
