Try leaving some starter unfed until a brown liquid forms on top. Mix the liquid back in before feeding and using. Also, you can feed the starter with some rye flour. It took me a few weeks of this to get a truly sour bread. You can also experiment by dividing your starter into different containers and trying different combinations of flour, feeding times and temperatures (fridge vs counter).
