I made the recipe and the bread tastes amazing. It has more of a French bread taste, not many holes and not very sour. My starter is very new though. My question though is how long is too long for kneading? I used my kitchen aid mixer with the kneading hook and I swear I must have kneaded fro 20 minutes? Did I go too long? I was aiming for the skill texture with a sheen in your picture.
