Hi, I tried this recipe the other day and didn't get very good results. The loaves didn't rise very much, even after 4 hours. My starter is pretty active though, so I might have let the rest period go on too long (5 hours). During the rest I folded it every hour because I saw that mentioned on your site elsewhere. Should I not do that? And also, the dough was very cold from being the in the refrigerator. Even 5 hours later when I divided it into loaves, it seemed very cold. Do you recommend anything for warming it up besides leaving it out at room temperature? In my case room temp is about 75 deg.
