I think I have a very vigorous sourdough starter - I borrowed it from a friend and on the first feeding it ROCKETED up, more than doubling in 5 or so hours. The starter was extremely airy and full of bubbles when I started baking my half recipe. Looked great through refrigeration and making the dough, but it was fully proved in 3 hours, rather than 5 (I used the poke test) and the second prove seemed to take less than an hour. Is this a problem? (I'll update with how the loaf turns out!)
