Hello! My sourdough is currently in the fridge for the overnight period, but my question is: how long can I keep it there? My morning got a bit busier than I had expected before I went to bed and I’m not sure I have the time at home to proof/bake. Another possibility would be to mix in the remaining flour after the overnight fridge period and then... take the dough with me in my car for an hour drive and bake at my destination...? Would that be weird and wrong? Thanks for your help!
