This is indeed the Mt Everest of baking, and what I'm hoping to create is sourdough PIZZA crusts. At five cups of flour plus one of sourdough starter it looks a bit shy of my usual three crusts I bake at a time, but I guess I can play with it a little.
On my first try though - it seemed like the dough quit rising at some point during the night. . I wonder if I need to just be patient
