For the best rise, Jessica, we have three tips. One, give the loaf a really tight shaping. Two, let it rise in a brotform or in a bowl lined with a (heavily floured) tea towel, covered with plastic wrap. And three, bake it in a Dutch oven — the steam it traps and the sides of the pot both allow the bread to rise as high as possible. We hope this helps, happy experimenting! Annabelle@KAF
