Hi Raj! We're glad to hear that some naturally leavened sourdough will be in your near future. When beating vigorously you really just want to to make a really homogenous mixture with no floury bits leftover. You can certainly rise and even back your loaf in the Dutch oven, it's just going to take longer than the loaves that also included yeast. Happy baking! Annabelle@KAF
