So long as the dough comfortably fits in your pan, J, go for it! You can line the bottom with parchment to prevent the possibility of it sticking to the bottom. Bake time will be a bit longer than the recipe since the loaf will be bigger, and might take some experimenting, but you want it to reach 195°F in the center when tested with a digital thermometer.
