I am a first time bread baker and maybe bit off more than I can chew on this! I made my starter and everything was spot on. Last night I finally was at the stage to refrigerate the dough for 12 hours. I got up this morning and took it out and added the flour and salt and began kneading. It was dry like you said at first and I kept waiting for it to turn into a sticky shiny ball. It never did. I got it to the stage of a nice soft dough, but it wasn't super sticky and certainly wasnt shiny. I didn't want to overknead, so I have put it in my bowl to rest covered at room temp for the 2-5 hours. Is it going to be ok? Did I do something wrong?
