Hello. I'm new to baking bread and I really like this sourdough recipe. I've made couple loaves with some success. Do I need to deflate the dough before I shape it or try to retain the volume when I shape the dough? My goal is to have many big holes after baking. If I bake this in a ceramic loaf pan, do I need to change the baking temperature and time? Do I need to grease the loaf pan? Thank you!!
