All-purpose flour makes yeast bread and rolls that are soft and supple. Using bread flour in the same recipe will make baked goods that are firmer and with more chew. If that's what you're looking for, consider making one of those successful all-purpose recipes with bread flour and then you'll be able to taste and see the difference in flavor and texture.
