Cindy, sourdough bread often needs to bake at a high temperature to achieve both a crispy crust and a pleasant texture all the way through, which is why this recipe calls for a 425°F oven temperature. You might also want to try baking on a pizza stone, which helps transfer heat directly to the bottom of the loaf. You also might want to check the temperature of your oven to ensure it's heating to the temperature shown.
