Hi there, It sounds like things are going really well with your breads, aside from that last little bit of oven spring. Have you thought at all about investing in a baking stone? That may be just the boost that the loaves need. Baking sheets are great, but nothing really beats the hot, direct heat of a stone. ~ MJ
