About to start on my first rustic sourdough recipe. The starter has been refrigerated for about a week. You mentioned to make sure the starter is "fed and vigorous" before using. My question is how soon after feeding can I use the starter? Is the intent to feed it and then use it immediately? Typically my starter does not appear very active immediately after feeding. Your help is appreciated. Dean
