Ann, it probably would have recovered without the yeast, but adding it definitely didn't hurt. Adding extra flour might make your loaf denser/drier; the best-rising doughs are sticky. Without knowing the exact appearance of "very sticky," I can't tell you whether you did the right thing, adding more flour. But - the proof is in the pudding (er, bread).
