If you are adding 5 cups the second day, you have mis-read the recipe... Starter, water, 3 cups (of the total of 5 cups) flour sits overnight. Then, the next day... Add the remaining ingredients including approx. 2 cups of flour to get a 5 cup total. It might need +/- a little bit and is indeed effected by humidity. But the +/- will be less than 1/2 cup usually.
