I've heard horror stories of exploding churros if you don't use a star tip to pipe them out. Working with hot oil is always a "Pay Attention!" moment. Empty the crowd out of the kitchen and close the door. Hazards like the one you describe usually occur when the oil has gotten too hot. Keep a close eye on the thermometer. Frank @ KAF.
