I just bought a pasta roller attachment for my Kitchen Aid mixer (with Spaghetti and Fettucini cutters) and this was my first recipie. The pasta came out great. We simply tossed it with EVOO and grated Asiago cheese. Marvelous! We froze half the pasta in nests and then put them in a zip lock bag. Much easier than drying them.
Oh, and cutting them into Fettucici was easy once the sheets of pasta air dried on a rack for 15 minutes. To keep everything from sticking on the counter, a little semolina flour works wonders.
