Hi there, Barabra! We just want to clarify real quick — we wouldn't suggest replacing the potato in a gnocchi recipe with ricotta, but you can definitely find a recipe formulated to be a ricotta gnocchi recipe! Our Gluten-Free Measure for Measure Flour can most certainly be used in place of the all-purpose flour called for though. Happy baking! Morgan@KAF
