This was my first Covid attempt at ciabatta bread. We started the first part at 7:00 a.m. and proceeded with the rest of the instructions after a three hour initial rise of the starter. The rolls looked and tasted fabulous. A few weeks later I tried this again following the instructions pretty closely, letting starter sit overnight. Bottom line… we didn’t see or taste a significant difference so each time I’ve made these, I don’t do the long rise any more. I’m a “instant gratification” kind of baker. Patience only when absolutely necessary. Thank you for the wonderful recipe. Oh and for being there for us during those tiring, lonely times in Covid.
