Hi, Steph! We would not recommend giving this dough two overnight rises. If you made the first rise a shorter one at room temperature, you could make the second rise overnight in the fridge, but it's still not ideal, and would likely affect the final texture of your loaves. This is a recipe that's definitely better suited to weekend baking!
