I just made this from the recipe in the recent issue of Sift, and I wished I'd looked it up online here first so I wouldn't have been so confused by the different pictures. Mine ended up looking a lot more like what's shown here, a shortbread crust with pillowy whipped topping containing pieces and flecks of strawberry. The picture on the Sift recipe looks completely different--the filling is pink, completely smooth,uniform throughout, and mousse-like. They actually look like two different desserts. The main difference in the recipes is that the Sift recipe calls for only pureeing 1/2 the strawberries and dicing the rest (adding them later to the puree) which makes the filling more lumpy. If I'd have seen the online recipe first I would have pureed all the berries as called for here, for a better, smoother blended filling. Even so, I cant' see how this would end up looking like the photo in Sift. This dessert as it actually comes out looks and tastes fine, but unless there's a way to make it look like that photo, I don't think it can be dressed up enough to become "elegant".
