I was wondering how early is too early to fill eclairs? I've seen lots of advice for storing after they're made, but I'm making them for an Oscar party and trying to figure out if I can fill them that morning or if I need to wait until just before my guests arrive, but at that point, I'm going to be more focused on dinner! I'd rather not wait until right before serving since we'll be 2/3 of the way through the show! Best suggestions?
