I have made the eclair recipe..now want to make the crem puffs to ring to a cocktail party as a sweet. I want to make small ones.. do I need to reduce the bring time? Also when you put the pastry back on oven for 5 more mines ( after poking the hole to reduce steam)..do oyou turn oven off?or is it still in?Thanks.
