Your best bet is simply to remove the puffs from the oven, split them open, and scrape out the eggy part, leaving you with crisp shells. I've never experimented with the changes you suggest, so honestly can't predict what will happen if you try them. If you do, though, let us know how your puffs turn out, OK?
