I'm just about to attempt these. So excited! x3 I've noticed though that you have 2 recipes for the actually puff that are exactly the same, but in both recipes it does not specify if the oven should be off or still holding 350°F when you return them to the oven for 5 mins after you cut the puffs to let the steam escape. Maybe I'm just over thinking it? Yes, the oven will remain at 350 degrees. betsy@kaf
