I was stationed in southern Belgium for 39 months (Oct 63 to Jan 67) with the USAF. They made the best eclairs I ever tasted and the nation was famious for them. One point of interest I didn't notice in the recipe or comments is that the word ECLAIR in French is "Lightening"! The ones I had were pretty close. Bob Green
