This is a very late answer to your question - but there ARE 'baking blends' that are combined stevia and some sugar, I think.
By the way i don't know if you've ever tried it but a friend of mine made a chocolate cake with red beets and it was iincredibly yummy. I am not a fan of beets and was skeptical but this was superb. Might be worth experimenting if beet sugar is OK for you.
