I am hoping to make a breakfast cookie based on this recipe. If I substitute almond butter for some or all of the shortening, should I compensate with additional oil (or perhaps yogurt?) for moisture? I already have found that soaking the oats with some chia before adding to the other ingredients helps bind the ingredients together without needing as much white flour (gluten).
