Hi Mary, we do have a smaller starter feeding routine that sounds similar to what you're proposing, but it is based on maintaining about 60g of starter, and then building it over the course of a few feedings in preparation for baking. It can also be stored in the refrigerator when you're not planning to bake. This blog post outlines some options for building this smaller starter. The beauty of this method is that it creates a lot less discard, and the feedings leading up to baking serve to both refresh the starter and build the quantity.
