I have a very lively started used King Arthur formula but fed with whole wheat for 3 days then did 50/50 white whole wheat. The starter doubles in 4 hours at 75 degrees but it stays up there at full height all day. I stopped feeding it at 8 pm (when it was still fully doubled) and am now trying feeding every 24 hours 8am-8am The starter is 10 days old and I used it when it was at full double to make a Levain and it worked well. Have you heard of a mature starter that only needs feeding every 24 hours? Thanks!
