One quick question!! I used your recipe and made my own starter! YAY!! It is 8 days old and as happy as can be! Pancakes for breakfast today and making bread tomorrow!

Now for the question because the math of this is getting on my nerves. 113 grams each of starter, water and flour should equal 339 grams. When I feed I weigh out 113 g water in clean jar and add 113 g of starter and flour. Stir and let feed. The remaining starter in the jar never totals 226 grams! It’s always 10-20 grams less. Why!?!???
