Oh my! I was under the impression that you discard every time you feed. No wonder my starter wasn’t growing in size! But now, finally, it has more than doubled in size and looks great, with the good bubbles, etc! But it’s 9pm…I obviously don’t want to start my baking project right now! Can I just let it sit out on the counter overnight??
