I have a healthy but not-strong-enough-yet 2.5 wk old starter made entirely from organic unbleached flour. I’d like to give it a little more oomph so I bought some KA whole wheat flour. Do I need to give it another week or so to balance out or is it good to go as soon as I get a 2x/3x rise that smells healthy?
