Hi there, Lori! If your starter is ripe (fed), then you don't need to remove some and feed it before baking. But, if it hasn't been fed in a while and isn't bubbly throughout then you'll want to discard and feed it again before using it in a recipe calling for active or ripe sourdough starter.
