I don't stir my starter in between feedings. I keep my starter in a Weck mold jar (without the clamps or rubber ring) with the lid just resting on the jar. This way the moisture stays in but excess gas can still escape. The cloth that you use to cover your starter probably just isn't enough to keep the moisture in. Maybe you could try storing your starter in a container with a lid like a jar or a crock so less moisture escapes.
