Hi, Isabelle! You'll want to use your starter when it is at its peak volume. For most starters, that's around 6-8 hours after feeding, but 3 hours isn't unheard of. Nor is 12 hours! Starters are living things and unique. If you know that your starter typically reaches its peak around 3 hours after feeding, you'll want to plan your baking to start at that time, and feed your starter 3 hours in advance. Happy baking!
