Hi, Eric! Normally we suggest waiting a week until using your discards, as they won't be very flavorful at first. But these days, wasting flour is a very real concern for many people, so we're letting everyone know that new starter is still safe to bake with, but the flavor will improve as time goes on. Thanks for asking!
