Kat, just to be clear--each time you feed the starter, there's going to be discard, right? (Unless you want to end up with a TON of starter.) Obviously I don't want to throw out the discard--flour is just too hard to come by right now. So each time I pull my starter out of the fridge to make bread, and start its series of feedings, I should plan on also making pancakes, pizza dough, etc. so I can use up that discard, am I right? I'm new to sourdough baking, so my apologies if this is an obvious question!
