How covered should I keep my starter. Most directions I found say to loosely cover, but I find I am getting a dried out layer on the top this way. I am storing my starter (La Paindemique is her name) in the fridge and feeding once per week. If I put a tighter lid will I deprive the starter of something it needs? Is this dry layer okay? Thanks!
