I'm very happy that after almost giving up, I have both a whole wheat and regular (all-purpose) starter happy and healthy. My whole wheat starter (named Blanche because she's a rather fast) was ready yesterday morning so I fed her, made bread later in the day, and moved her to the fridge. (The other starter is named Rose - she's much slower.) I notice this morning that she's already almost doubled in volume. Should I go ahead and feed her? I'm thinking that rather than following a clock/calendar, I should probably pay more attention to when the starter doubles or more in volume and starts to fall, but I'm a novice at this. And don't want to waste any precious flour! Any suggestions are appreciated.
