My starter is about ten days old now. It started bubbling and rising really fast -- around 2-3 days in. I'm feeding it half wheat, half white AP. For the first week or so, it smelled like overripe fruit. Now it has a more acetone-like smell. It is behaving really well--tripling in volume between feedings. I've made one loaf so far, and the flavor was less sourdough-like than I expected, though otherwise great. Are the smells I've noticed something to worry about? Will the sourdough flavor "mature"?
