Hi, Faffi! You'll want to maintain a 1:1:1 ratio of starter to flour to water. So you'll discard all but a certain amount of your starter. (Let's say you want 50 grams, but it could be 100 grams or 20 grams, that's not the important part.) So you've discarded all except 50 grams. To this you'll add 50 grams of flour and 50 grams of water. When you want to feed it again, it will weight around 150 grams. So again you'll discard all but 50, and then add 50 grams each of water and flour. (Those discards can be saved to use in delicious recipes like these, so don't think you have to throw them in the bin!) When you're ready to bake bread, you'll stop discarding, and keep feeding your starter equal amounts of water and flour until you have enough to bake your recipe, and also keep 50 grams to maintain your starter.
