Rather than removing 1/2 cup of starter each time, you want to be removing everything except 1/2 cup of starter from your jar, so that when you feed your starter, you're always beginning with just 1/2 cup. The number of days will vary from starter to starter. Like any living thing, yeast grows at its own unique pace! But when your starter is doubling in size, usually around 6 to 8 hours after feeding, you'll know it's ready to bake with. You've got this!
