Hi, Rich! I also keep a cool house during the winter, at around 67 during the day and sometimes dipping into the 50s at night. My starter doesn't always double in the 6-8 hours that other people's do, but it does get there eventually. You might try giving your starter a few feedings of whole wheat or rye flour, to see if that extra nutritional boost doesn't help it out. You can also look for warm places in your home: near a radiator, on top of the washing machine, or even in a sunny, south-facing window with your container wrapped in dark-colored fabric for insulation. If you don't limit yourself to the kitchen, there are often plenty of warm little corners in even the coolest house. Happy baking!
