Hi, Katie! It sounds like your starter may just be a late bloomer. Much like all living things, they each grow at their own pace! If your starter is doubling in size (even if it's doing it after, say 10-12 hours, go ahead and bake bread with it. You'll just want to time your feedings and baking so that you're using your starter when it's at its peak, and not by the hour when other people's starters are fully expanded. Now, if your starter isn't doubling at all, that would be an indication that it's not quite ready to bake with just yet, and should get a few more feedings first. We hope this helps!
