Hi, Tatiana! You'll want to give your starter one last feeding before putting it in the fridge. Some folks swear by giving it an hour on the counter before putting it away to chill, but I haven't found it to be necessary with my own starter at home. Feel free to change flours! You'll probably want to keep the same flour stable for a little while just so you can see which flour you and your starter prefer, but don't hesitate to switch things up. Happy baking!
