Hi, Kasha! You'll want to discard some of the starter each time you feed it but aren't planning to bake. When you are getting ready to bake bread, you may find that you need to build up a larger amount of starter so that you have enough to use in the recipe, plus the normal amount you'll want to hold back in the container to keep your starter alive. In those cases, you'll stop discarding until you have sufficient starter. Hope this helps!
